  • I bought these several months back and had them in the freezer.  I made them today.  Smoked them at 250° for somewhere between 2.5-3.0 hours.  I have not tried the bacon wrapped pork loin in the center.  That sammich will be later tonight.  Pulled them off the grill shortly after the snowstorm had started to fall heavy.

    Just put on the Memphis


    One hour into the cook


    2.5-3.0 hours on the Memphis at 250°

  • I am glad you did this.  I have seen them at Sam's, but I did not know about them.

  • It is the only tri-tip that I have seen in this area, and I love peppercorn style steaks.  Not to mention it was only about $7/# which sounded good to me too.

  • So I took the leftovers and hand sliced relatively thin.  I vac sealed them for sandwiches.  I was amazed at what it looked like refrigerated versus after reheating.  It was almost as tender as thinly sliced prime rib.

  • I bought four of them last year thinking that it may not be something they continue with purchasing.  I am out now.  I need to go back and look for more.  I probably have made about 10 of them already.  It is the only tri-tip I have ever had.

  • Sam's will cut a Tri-Tip if you ask. Last time I was needing some I asked and I watched while they peeled three of them and then gave me my choice. I took the two best and enjoyed both.

    Haha...I asked them to cut some meat into slices for jerky and was told they didn't even have a slicer.  You are lucky to have them do that where you live.
