Title: FMT Brisket Style Cook

It has begun, put on at 250, gonna go straight thru until it is ready.  Now I am having a little fun with this.  I injected with Kosmo mixed in green Gatorade ( only liquid besides water that I had).  Then I used this Bacon Maple rub (mixed with another that shall not be named).

And celebrated with some Costco Chocolate Cake

I certainly didn't invent the process, but glad you are trying it out. Let me know what you think. I've never tried kosmos, but have heard good things.

That cake looks like something my wife would love. I don't ever recall seeing an all chocolate cake at my Costco. I'll have to take another look.

Yes McCormick Canada, Bacon and Maple how can you go wrong.

Update, about 4 Hours into the cook the MAK had a flame fail.  I did hear the alarm so I was able to restart.  First ever flame fail on the MAK.  I went out 15 minutes after restarting and then the temp was at 390, could not get it to regulate at 250, thinking grease was the culprit.  Well it was 1130 at night so I transferred to a pan and put in the oven to finish it off.  Right now it is at 195 IT so I am going to check for tenderness and if ready I will pull it and rest until 150.  Brisket just may not be my thing.

I remember seeing that brand of spices at Walmart Canada when I used to travel up there.  Is it similar to the USA McCormick molasses bacon spice blend?

I had a couple flameouts this year.  Both seemed to be going from about 250 down to smoke mode when they occurred.  Do not remember having any while the grill was operating at a set temp right from startup (i.e. if I started at 250 out of the gate and kept at 250).

I really have no idea, my wife bought it and I just found it with my rubs.  My daughter just loves it.  Maybe some one else here will know.

Is your MAK using Wifi?  if so, did you check to see if it lost connectivity?  According to MAK, if the Wifi loses connectivity, it automatically drops to Smoke mode.  Could have contributed to the flameout, if the scenario happened.

Even with all the problems it was by far my best, really tender and tasty.  Little light on the Smoke flavor but wow was it good.

I recommend trying with Gatorade, it was good.

Too soon to judge if brisket is your thing. Keep trying. I know it's a tough cut to get right, and it can be expensive, and it takes a long time into the cook before you know whether you were successful or not, but the rewards for when you flip the switch and find a method that works for you are so great, that it's worth all the time and effort. Keep trying!

One last question, at least from me:  did you start with a cleaned and empty firepot?  I assume yes, but thought to make sure.

Yes I did.  Good question as you never know.
