I would hope that if any Costco sold untrimmed tri tips, it'd be Santa Maria!

Costco always offers a regional meat selection, which caters to its local market.  The ONLY thing I miss about Southern California is the meat selection at Costco.  They always had prime grade tri tips and my favorite cut of beef, flap meat.  When I escaped CA and landed in Indianapolis last year, I could only find one butcher that even knew what flap meat is.  He can get it, only if I buy an entire 80lb case.

Most big box places have regional suppliers, which is why things are different between stores many times.

It doesn't look like much, but it has a very beefy flavor and is rather inexpensive.  Some don't like the somewhat chewy texture, but I like it just fine.  It's very popular in Southern California, as it's commonly used for carne asada.  It takes either dry rubs or marinades well and is best when cooked over HIGH heat.

My Costco in MN never has Tri Tip.  Wished they did.  It seems to be a specialty cut around here.  Anyone else in MN find them besides paying high bucks at a local butcher?
