I'm going back to low carb. I love potato salad but cannot justify the carbs.
Simple Egg Salad
12 hard boiled eggs chopped
1/2 cup mayo
two celery stalks diced
2 tablespoons mustard
salt and pepper to taste
I like to dust with smoked paprika when served.
I'll get a picture on my next batch. I serve this with chicken skewers with Stubbs anytime sauce which is gluten free and lower on the carbs than a Stubbs bbq sauces.

I am in it right now. This looks good for something different. How do you eat it or more precisely, what do you eat it with? After reading it my first thought was “sandwichâ€!! I miss bread.
Duh just read chicken skewers paragraph. Sounds fantastic.

Nice recipe, pretty much mine minus the sweet pickle relish.

When my "girls" were giving me more eggs than I could eat for breakfast, I would boil up a batch of eggs and make egg salad and more times than not, it would be without bread (carbs) and just eat it off the plate. Sans sweet pickle relish. :puke:

MMMMM. Oakridge Death Dust....that's the stuff that goes good on anything. Got about 2 bags in the pantry.
