Title: smoked peanuts
Post by: hokiepop on February 22, 2018, 02:54:30 PM
I acquired a large bag of shelled raw Virginia peanuts and want to know if anyone has tried smoking peanuts.   If you have, do you have a favorite rub/spice you use with the peanuts.   These peanuts are from Wakefield, Virginia the site of the first planted peanuts in the U.S.

Me too!!  Tons of them are grown around here every year and my sister's husband loves them fresh.  Never thought about smoking some.

Hm, that was not what I was hoping to hear.   All the oven recipes I read state to cook the peanuts at 350.  How long did you smoke them?

A bit off topic.  I relate peanuts to George Washington Carver.

Well, Carver was great at experimenting with peanuts so maybe hokiepop will follow in his footsteps on this one and be able to teach all of us something!

According to Google roast at 350 for 15 to 20’ for shelled and 25 to 30 for unshelled.  Give it a try and just taste test as you go along.

I'd make boiled peanuts, they are good!  One word of warning, they can take a long time to boil and the brine is pretty house stinky after a few hours of boiling.

My sister's husband has figured out how to cook them in a microwave when raw and then has them on a bowl of ice cream.  ???  I'll try to remember to ask him about it.

I finally remembered to ask him and couldn't give me exact times for the microwave.  He hasn't done it in a long time and forgot how.

I got a two pound bag of raw ones and tried smoking them yesterday.  I did 350 for 20 minutes and about half were good and the rest over done with no rhyme or reason for location.  There'd be one over done one surrounded by good ones and a good one surrounded by over done ones.  Luckily the wife and girls seem to like them a little over done so I skated on that.   :o

It's rather odd that HEB has an empty place on a shelf labeled for bags of raw ones.  Always plenty of roasted ones next to the empty raw area.  Yesterday was the first time I've seen the raw ones and I got the last bag.  Apparently someone around here has figured out how to roast them well and does a bunch of them.

Will you try and salt or flavor them either before or after smoking?

They need  salt and it would help immensely, but I don't know how t salt them in the shell.  The same company that had the raw ones had roasted and salted in the shell.  I googled and got this:

In a large, 5-6 quart, heat safe container, dissolve the salt in the water. Add the peanuts, stirring so that everyone is submerged and coated with the brine. Take a plate or pie pan and set it on top of the floating peanuts to make sure they stay that way. Stir them once every hour over the next 5 hours.

Might try it if I can get another bag.

I have had some good results smoking nuts. Try this google search link (https://goo.gl/UCuqUM). The first search result will probably give you a number of good alternatives. We and everyone who tried them loved the Parisian Cashews.

I decided it's not worth the effort also.  A bag of raw and a bag of cooked is the same price.  Just easier IMHO.
