Title: Honey Almonds

I made a big batch of these for Thanksgiving with a big group of relatives, and I don't think any were left over.

Ingredients:

You'll also need a grilling mat or cookie sheet.

Preparation:

Melt butter.

In a large bowl, combine almonds, honey, brown sugar, and butter - mix until almonds are fully coated.

Cooking:

Spread almonds to single layer on a grilling mat and sprinkle with salt.

I cooked as a two step process.

Step 1: Using a smoker tube, I cold smoked the almonds (with the pellet grill completely OFF) for two or so hours. I used 100% hickory pellets.

Step 2: Bring the grill up to 300 to set the coating and roast the nuts. Don't overcook - keep sampling and pay close attention to color.

Remove from heat and sprinkle additional salt to taste.

Serving:

As they cool, the almonds will clump and stick together. We simply broke them up and served them, but you can also toss them into table sugar to help keep them separate.

These were a huge hit!
