Took me 6 months to learn how to cook on my Camp Chef SG and now starting over. First question is what the heck is this thing good for. Iv asked 1/2 dozen people and no one has a clue.

Question #2 This pit is insulated so I dont get much temp swings but cook times where taking quite a bit longer. Thought because I was use too CC running hotter than set point. Today I set one of my Therm Pro TC on bottom grate and other on highest grates. Set temp at 220 degrees and lower tc read 20 deg lower than set point. Upper TC read 250 so thinking controller was averaging temp difference. Kicked set point to 270 deg and upper rack stayed at about 305 and lower rack stayed around 255. Is this normal for the Memphis Pro.

I found that my unit needed to be on about 45 minutes at the temperature I set it at to be spot on for hours. Once the chamber is in full equilibrium, I never saw more then a 3° swing below 400.
New units, I have no idea how they work!

I would test your less expensive thermometer. I don't find my Memphis running that much of a variance. That other thing is to keep your fingers and arms out of the pellet hopper so they don't get caught in the auger. I removed mine. I use a Kingsford charcoal container to dump pellets into the hopper so I will take the risk of losing a finger.

That's used if you reverse the way the lid opens. You flip that when you fill the hopper so pellets don't fall into the gap.

You are ether a genius or only only person to read entire manual.

If you guys are getting same temp at bottom grate as set temp I will run another test. I tested my tc in a ice bath and read 33 deg.

I would test your Thermo Pro 1ST: Check both probes side by side in the pit*. The reading should be the same or very close. If not switch the probes in the T P to see if the difference is in the probe or the T P.
As Bent stated, takes ~ 45 Min for the pit to stabilize. My Pro's temps are within a few degrees of each other, ONCE STABILIZED. The pit must
"heat soak". Air heats quickly vs the mass of the pit.
Let us know how you make out please.
* Could ice-bath both probes and T P circuits as well.

I had a big chuckle when I read your post. My pitmaster status is still beginner. That magnet is to let me know I was using a blend from Lumber Jack.

Don’t underestimate yourself. If I can do it you can do it. Takes lots of practice but you have the perfect machine for it. In the meantime enjoy the acclaim this unit will bring you among friends, family & neighbors. You will undoubtedly hear: “Those are the best ____ I have ever had!â€

I ran another test and you guys are correct. I installed TC #1 on bottom grate and #2 TC on upper rack. Set temp to 250 deg. 40 Min in #1 was staying steady at 250 and upper steady at 265. I expect temp difference of upper rack with the variables of heat rising and fans not running constantly when reaching set temp. Ran set temp too 300 deg and 30 min in #1 TC reading 304 and #2 325 deg. Another thing I am learning about this unit is how well insulated this pit is with walls not that thick from insulation. It does not resemble a Yeti cooler but if you need to drop set temp, opening the lid at least 30 seconds is a must. Looking forward to smokes this Winter.

Good to hear B C... Now cooking should be more of an enjoyable experience now that you have mastered your pit.

The Memphis is the only grill of the 5 I have that I do not need to use a remote thermometer on the grate to know the grate temp vs controller temp. It maintains that steady of temperature.

Do the same test with the oven in your kitchen and let us know how it comes out. Would be curious to see. My guess is it will be less accurate, higher temp swings and temp ranges than your Memphis.
