Title: Something I noticed while cooking today

So while cooking a brisket on the pit boss classic I got last weekend, I noticed something that affects the temperature. I cooked the brisket for about 7 hours with no issue, temp up temp down at pretty consistent temps. At that point it was in foil on a metal pan. I decided to put some vegetables on the grill which were also in a metal pan. Well, as soon as it went to cycle the temp spiked way higher than it had been. Long story short, if you block the air flow, you will have issues with temp. Keep in mind, I always put a thermometer to monitor the grill temp since I have wifi and bluetooth thermometers so I literally watched the grill temp all day, so I know when the temp spike happened. That is correct on almost any pellet unit.

I figured that but common sense doesnt always kick in. Makes me wonder if some of the negatives come from circumstances like that.

 My take on the pics: Veg = perfect. Brisket = wonderfully juicy. Had to have tasted very good +.

It was good. Brisket was fairly cheap but still came out nice. Thanks!
