Title: Cowboy Caviar

This is a tasty dish.
Goes well with Crackers or Tortilla Chips or can be used as a side dish.
Haven't tried with Potato Chips.

Cowboy Caviar

Prep Time:   15 minutes
Servings:    12 People

Ingredients:
1      ea    15.5 oz. black beans
1      ea    15.5 oz. black-eyed peas
1      ea    15 oz. sweet corn
1      cup   cilantro chopped
1/2    cup   Red bell pepper chopped or diced
1/2    cup   Orange bell pepper chopped or diced
1/2    cup   Red onions diced
1/4    cup   Sugar
1/2    cup   Olive oil
1/3    cup   White wine vinegar
1      tsp   Chili powder
1/2    tsp   Kosher salt
1      TBSP  Fresh lime juice

Instructions:

Drain, rinse and pat dry the beans and corn. transfer to a large bowl.
Add the cilantro and the remaining ingredients to the beans and corn mixture.
Stir to combine. Serve cold or at room temperature.

My wife used to make that pretty regularly several years ago.  Her and her daughter really enjoyed it.

I am not a huge bean or cilantro fan, but if I saw that on a table I would have to try it out.

This looks like something that I'd enjoy. Any reason frozen vegies/beans couldn't be used instead of caned?

None whatsoever.  Guess I should have mentioned that.
We did use frozen/then cooked, corn and black-eyed peas.
The black beans were in a can.

I think the recipe (not mine) was written that way for simplicity. A can of this, this, and this...

I'm pretty sure it's written the way it is so you don't have the defrost time to take into consideration.

With the exception of tomatoes, I stopped eating canned foods 50 years ago. But you are right, no need to defrost or cook canned.
