Title: Healthy smoked turkey meatloaf

The healthy cooking continued today with smoked turkey meatloaf.

The meatloaf used the following:
3 pounds of 93% ground turkey
2 shredded hot dog buns
2 eggs
Diced onions, green peppers and red peppers
Shredded zucchini and carrots
Tiger sauce
Oregano, basil, marjoram, sage, thyme, salt and pepper.

The mixture was added to two foil loaf pans. Holes were punched in the bottom of the pans to drain the fat while in the smoker

The two pans were smoked for about 1 3/4 hours at 375F, until the internal temperature was above 165F.

After resting, the meatloaves were removed from the pans and sliced.

They turned out really well. The Tiger Sauce provides a nice kick.

I have added shredded cabbage and cherry tomatoes in the past. If I add enough cabbage they start to taste like the inside of an egg roll.

Yes, a healthy alternative.

93% ground turkey.  Where did the 7% fat come from?  The turkey?

Was it moist?

93% is the normal ground turkey. This turkey is a combination of light and dark meat. For the smoked bell peppers I was cooking we used 99% ground turkey which is all breast. The 99% is really dry but works fine when you add tomato sauce to it.

When I do these meatloafs in the oven I usually have to poor off some fat and liquid. Punching holes in the tin and using the smoker allows the fat and liquid to drain.

The meatloaf was very moist. I believe the moisture comes from the vegetables, which were added raw. There is a lot of moisture in vegetables which is why I precooked them before putting them in the frittata I posted about.

The texture of the meatloaf is soft and easy to eat. Many meatloaves feel like they are compressed and very dense. That may be preferrable for sandwich slices, but I like this texture better for eating off of a plate.

This was definitely designed to be a low calorie, healthy alternative to a normal meatloaf. I have made many variations of this, some becoming more vegetables loaves than meatloaves.

Here is another with a grape tomato and green onions garnish on top. There are also tomatoes inside. Otherwise, it is pretty similar to the one above.

Tomatoes always add to the meatloaf. I also like to add cabbage. That makes it taste like the inside of an egg roll.

I have never tried ground turkey anything. Maybe I will see what I can find and try something like this.

I used to make meat loaf with, carrots, celery, onions, peppers, some cabbage and mushrooms in it. The people didn't like them so much, so I started pureeing the vegetables in the food processor and adding them, then they would eat it, because they didn't see them.

For a bit of pop, put some Tiger Sauce, or similar in the meatloaf. My wife didn't tell me that she put Tiger Sauce in this one. I use it a lot.
