Title: What are You Cooking This Weekend?
Post by: Kristin Meredith on October 06, 2017, 09:03:25 AM
It is suppose to be fall, but it is to be 85 today and 85 tomorrow.  We aren't suppose to have real fall temps until Oct. 17.  But I want some fall type food, so I am going to roast some butternut squash and sweet onions on the Memphis Pro and take some homemade chicken stock and make myself some butternut squash soup.

This will probably have to wait until Sunday though because we have a big weekend here in Mayberry.  Saturday morning is the car show at the BSVFD and Bent and I are helping with the cooking.  Even more exciting?  It is Farm Tour Weekend!!!  This is an annual event where agribusinesses in the county open their doors to visitors.  On the tour are small veggie farmers, bee keeping and honey, a llama farm, the Master Gardener Demonstration veggie garden, a working cattle operation ("Moving Meadows"), a brewery on a farm, and best of all this year, a dairy farm which will demonstrate their automated milking machine.  I know, we country folks get excited by small stuff, but it is pretty neat and you get to drive all over the county and see a lot of different agricultural businesses.

We are watching our granddaughter because our grandson was just born a couple weeks ago, and dad had to go back to work so we are helping out. Not sure how much time I'll have to cook, but grilled flank steak salad, and some broccoli salad are on the menu at some point. Also maybe for some of the playoff baseball games I am going to try to make some of my favorite "old dave" wings.

Hey Lothar - Tell us more about the carnitas.  I've tried a few different ways of doing carnitas, but I have not been completely happy with the results.

Have fun,
John

I found a recipe via a youtube video that looked good that I will be trying.  Seems to be a good recipe compared to alot that I viewed online.  Will post some pics if time permits or at least the finish product and recipe / method.

I'm doing a Tri tip!

Using the Oakridge BBQ Santa Maria rub.

Smoke at 225º to 120º internal temp then move to the searing burner on my gas grill and crisp up the outside.

I'll serve sliced thin with garlic bread.

Definitely a family favorite.

I think I am going to bacon wrap something, just not sure what yet.  I guess I could also whack off a piece of the Corned Beef and see if it is ready.  CB Hash sounds good with some eggs, hash browns and biscuits!
