Title: Spatchcocked cornish

Nothing fancy, spatchcocked Cornish and chicken breast (Costco breast so it's like a turkey breast) over potato slices, carrots and onion.  SPG 250-275F until done, probably 1.5 hours.  Usually do with cast-iron skillet but I've got so much stuff in storage I am lucky to have my cookers out.  Beautiful day in the PNW after what seems like forever rain.

Yes, KJ Jr.  I've done this  before, this was not my best.  Been awhile and I'm old and I forgot a few key steps.  Wife says I need to keep notes in a book.  I really should. :-X
