Breakfast on the Pit

Not mentioned often or at all is, breakfast.  If you do breakfast, how often is it done and what food is cooked?.. If it is something special, what's the process?   :bbq:

Haven't done it yet, but have a nice griddle (ceramic coated) that I plan to use for this next summer.  Eggs, bacon, sausage, pancakes should be easy enough.  Already used it for burgers with great results.  Different flavor than grill grates.  More Mailard effect.  However, can use same griddle on stove top for the same results.  Choices, choices.

Have never done that.  I don't eat eggs so that limits my breakfast selection.  I love grilled potatoes and onions.  I plan to make them on my Camp Chef griddle/grill that I bought a few months ago but have yet to unbox (Amazon holiday sale price).

Bacon on the Traeger about once a week.   That's gotta count as breakfast.   The best results come from quality thick cut bacon a good 90 mins or more at 180 (rushing only gets you crispy, not rendered bacon).   I've found frying bacon to be too salty now that I've gotten used to cooking it with pellets.    I'd go so far to say that simple bacon is the most complimented food I've served guests.   It's a game changer vs oven/stovetop cooking. 

Eggs still done inside.

I am pretty much long past camping days, I sure could have seen it then if I had had one.  It is just so much easier to cook in the kitchen.  Bacon on the pit and "Southern Biscuits Formula L" biscuits would be my last bastion I guess!

One of my favorites on the grill is Egg, Ham & Cheese breakfast sammies.

I put the grill on 500 degrees, place a griddle on it spray some non stick.

Slice a Ciabatta bun & butter both sides and place on the griddle, a couple minutes before adding the eggs & ham.

Crack a couple eggs into a small bowel & add your seasoning, I usually use pepper or garlic salt.

Dump eggs on to one corner of the griddle & place ham on the other corner. Flip eggs & ham to get thoroughly cooked.

Bun should be a golden brown by now so take off & first add cheese, then the eggs & ham. everything should be hot enough to melt the cheese.

silverbullet, that sammie sounds awesome.  I have ham, I have eggs, I have cheese, although not ciabatta, I have rolls..... you might have talked me into a breakfast sammie for dinner.

I eat them all the time, but prefer the Sausage Egg Cheese version more.

Hash brown has to go inside the sandwich for me...That is what I love about Biscuit World...Biscuit, meat, egg, cheese and hash brown all in one!  I love the Duke and the Thundering Herd!

gtsum2, those are some serious eats, right there.  :clap:  Now I'm hungry. Add "Visit the Pelletfan Forum" to the list of things I'm not supposed to do on an empty stomach.

I have taken a cast iron skillet and use the Simply Potatoes shredded potatoes with the onions and peppers, a couple cans of Campbells Cream of Potato soup and a lot of shredded cheese.  I think its on the back of the simply potato packages (they are by the eggs in the grocery store).  It comes out really good.  Not sure the smoker does a lot for it but its always a hit in our house.  I did this at a local competition in the morning and the competition seemed to like it.  Don't worry I didn't put in the ex lax :)

Started out this morning just cooking some bacon for a Meatloaf I have on now. Figured heck, Why stop I had a couple extra eggs...
