If you mean could you pipe it into casings yes. Once cooked, pretty sure it would be just like Spam in a casing. That guy is just making homemade Spam, I would venture to guess at 1/3-1/2 the price.
I think many people think Spam is a lot of offal and off cuts...It is not.
