As a pellet guy, do I need another smoker?
« on: February 25, 2018, 01:33:52 PM »

I'm craving the fantastic jerky I made with my Little Chief.
It was my first smoker 40 years ago.
I'm not sure anything off my GMG DB is like it.
Please advise.

Go for it!

Quickly sell it on craigslist if it doesn't meet your expectations.  You'll lose half of your purchase price.  A small cost for peace of mind.

40 years ago, our Little Chief was relegated to smoking smelt. It was the only thing that could drown out the mud taste of the fish with the heavy creosote taste it created.

What are you asking?

If it is an item that will only produce the flavor you want...Only you can determine if it is worth the cost to get it!  I wish I could be of more help.

I've made quite a bit of jerky on my JB. Turns out great. Better than any commercially made jerky.

Maybe add smoke tube to your GMG DB. I have 2 little chief smokers up in attic. But I like to just turn the DB on 150 and let smoke till done. Still remember the days of loading the chief and trying to keep the temp right by keeping it in the box or wrapping with blanket then having to add chips. Then you open it up to rotate it and you loose all the heat. Seamed to take all day and some. Then again they do make some fine jerky.(from my child hood memories) Some day may have to try side by side test....

I still use the Big Chief purchased about 30 years or so ago - still makes perfect jerky. I'd keep your Little Chief just for that alone - however the Chief makes great salmon as well.

I generally use my Excalibur dehydrator for deer jerky and it does great...I need to try the Memphis and see how it does. Personally, I think jerky needs to be dried or at 150 degrees or so and I know my Memphis will only go down to 180...

I have used the Memphis and it does not perform as well as the MAK for jerky.  I am going to try 2 hours on the Memphis and then into the dehydrator after that.  I think it will be better than full cook on the Memphis.

I love the pellet grill because it added terrific smoke flavor.  Memphis at 180 with the lid cracked open?

Must just be me, but I don't think any BBQ, pellet or other wise, does jerky as well as a dehydrator!

I just did 4# on my dehydrator and  missed the smoke flavor of the meat.  The challenges I have had with the smokers probably come down more to drinking all day when making it and not paying close attention to it from batch to batch.  If the weather cooperates this weekend, I will do another 5# or so batch started on the smoker and then finished on the dehydrator and hopefully get the best of both worlds.
