Just an idea for your unassembly issue. Is there a business of any kind in your area that you could get a price from to crate the smoker to ship? I know crating on the large smokers is a ton, but maybe much less on this? 

You could pick the winner first to get an idea of shipping before you commit to crating. I'm guessing if the winner is on your side of the country there is plenty of cushion in the funds. I'm sure they would appreciate it as much as you would.

I am thinking a little like you FMT...will just have to see.  If anyone wins this within 200 miles of me I am delivering it and using some of the shipping money on gas just so I don't have to take it apart!

I was surprised that it would not settle down to 225°, went out, screwed down the chimney and it seems to be coming down...will give it maube one more hour...since we will be doing this all day tomorrow!

The temps are amazingly consistent from shelf to shelf.  That's really impressive.

Just got home from my work travels.  The stability of those low temps is impressive.  Can't wait for the jerky cook to see if it stays that way.  It could be a jerky cooking machine.

As for shelf placement, I am fine with where you have them.  I don't have any other preference.

I'm 240-260 miles away.  I may have to give you extra gas money to deliver, or I may drive down and then stay at my wife's cousins house in Frederick, MD.

If I don't win and the performance holds up for the jerky, I may have to place an order at WM and buy my own.

Bentley, can you somehow test the probe that came with the grill to see what it's temp reads comparative to the tappacue?  I would prefer in a piece of meat that is cooking.  Curious as to whether it will be useful or not.  Also, how many probes connections are there on the controller - just one or multiple?

There are 2 probe ports.  Can do a Tappecue and Pit Boss probe comparison tomorrow. Will test with food in a few days!

I am ready to start up, I am just at a loss as to where the PROBES should go?  Again, do you want all 4 on one shelf?  Maybe I am over thinking this?  The 4 right now are dead center on the 4 different grates.  If you see this Lew, you could comment.  I know you said you did not care about where the grates were positioned.

I have a few things to do around the house.  For no I will just leave the probes where they are, add water to the water pan, and start at 150°, in an hour turn to 250°, etc...

So the Tappecue will be back up in a few...

Thanks again for all of this Bentley, I didnt expect to be as excited about the tappeque charts as I am. Very nice work so far. I dont really have an opinion on the probe locations...I am new to all of this but I did want to thank you for all the work.

Maybe run bottom left, 2 middle, and top right....and then go top left, 2 middle, bottom right.

Trying to get a sense of top to bottom and left to right temps.

You have already tested center of grate for each shelf and the temperatures were fairly uniform top to bottom. If you could could check the corners of one of the lower grates and maybe the corners of an upper grate we could know how uniform the temps are at each grate level.

How does the overall build quality seem? The one I saw at Menards was on a high shelf, so I couldn't really put my hands on it. Seemed pretty decent for the money from what I could tell.

It is a thin gauge.  And I would not want to move it every weekend for a competition...but as you say, for the price.  If I had been able to look at this at the price it is now and a Traeger 075 for $700 in 2002 when I bought it.  I would have bought this just for the space.

Water does not seem to dissipate to fast on the 150° settings.
