I have no idea what she has done!  I will look at it in the morning.  Whatever it was, I guess just jamming chicken tray in the unit with out taking out the probes did it.  Pretty much a days testing down the drain!

Did two probes get removed or are they on fire?  They are at 2000 degrees in the graphs.

Yeah looking at the pics I figured there may be too much blockage with the trays in there. Even though that would make for nice cooking!

Buy the way the wings looked that was a half sheet pan not quarter? Looking at what was left over on the sides, you could get a full steam pan in there?

I have no idea, but I think maybe the chimney position has more effect on the unit then I think.  And to the best of my knowledge, not one word of info on where it should be positioned in the manual!  Never been a big believe in then, never used either on my GMG.  I think I jumped into the testing way to fast to give the unit a fair shake, but hey, you all just get to see behind the curtain right?

Virtually no wind on patio.  So I have opened up the chimney and I have to go collect firewood for tonight, so will just let it run t 225°.  May need to add some water back in an hour and see how that goes to!  Stay tuned!

It has been almost an hour and a lot of ups and downs.  I have never cared for water pan cooking.  I know the instructions say always have it in the water pan.  I believe it is to help with grease collection too!  But it has been an hour, I am going to dump the water out and run for another hour without water and see if the results are the same.

I seem to remember from somewhere that people have used sand instead of water? Something about being more stable if I remember correctly. Is that a possibility?
I'm not asking you to do that, just wondering if it is reasonable.
I can't remember where I read that so I may be way off base.

I think I will print this graph.  And start a new one, what I call the "sweet spot" on the grate.  I will leave temperature at 225° and add water, will take new photo of probe placements.

Water, no water, chimney down, chimney up, no wind.  On the fringes...It appears to run hotter in back then front, but pretty uniform front and back, if that makes sense?

I would be interested to see the 4 probes on the middle shelf at the cardinal points - front, back, left and right.  That way we see the variances around the chamber.
