Happy Easter All!

My first Memphis Prime Rib. Penzey’s English Prime Rib Rub and a little extra pepper. Smoked at 225 for an hour, raised to 275 until 125 IT, then cranked to 500 until 129 and pulled as soon as it hit (made it to 482).

Very sweet, days like this are fun.

Very fun but my weekend was hectic!  I'm still sorting through the pictures.  1st daughter turned 6 on Good Friday and 2nd daughter turned 3 on Easter.  We had a wild party for the kids and their school friends.  In-laws were in town and staying with us.  Then Easter egg hunt and leg of lamb at Mom's house.  Crazy times but fun!
