  • First time smoking beef ribs on the FireCarft.

  • As with beef ribs...they are either good or bad. 2 ribs were outstanding. The rest were good but tough.

    They looked promising. Thank god someone brought by thinly sliced pork chops that were marinated. They saved lunch.

  • Short Ribs?  How long did you cook them?  One of the few ribs that need 3-4 hours on about 300° for me!

  • They went on at 8:45am at 235. They were in the car for about 45 minutes to work so they were not really that cold. 12:15 they got wrapped and thrown back on for 2 hours. One piece was melt in your mouth. Another piece was good. The rest, tough.

    It had to be the meat. I’m a pit master in my own mind!
