  • Good looking recipe. That’s also known as eastern North Carolina bbq sauce. It’s used exclusively for pulled/chopped bbq pork around here.
    The Tony Chacheres is a good idea. I haven’t tried that twist yet.

  • Just tried the jj’s finishing sauce (google, easily found) on pork butts just finished.   

    Umm yeah that’s some good stuff.

  • You have to like an acidic overtone to enjoy theses sauces and that profile in a sauce has never been to my liking!

  • Right this is the opposite of sugary bbq sauce.  I like it since it seems to cut the fat as opposed to laying on top of it.

  • I will put some Sweet Baby Ray's on the table for people that feel like BBQ needs sauce, but don't use it myself. In general if I go to a restaurant for BBQ I ask if they sauce their pulled pork and if they do I just assume it is bad and has been sitting in a restaurant version of a crockpot all day.
