So this slicer attachment is also part of the meat tenderizer?  Am I saying that so you understand what I am asking?  You just take the slicer blade out and put a tenderizer blade in?

To tenderize, yes.

I kept them both in for slicing, but I am not sure if I should have or not.

I will have to take some pics of it unassembled and partially assembled.

Smoking session is complete for this batch.  I just put it into the dehydrator at 160°.  Will check it in an hour or so.

Smoked for 2.5 hours on the Memphis at 180° (lowest it will go)

Just pulled it out of the dehydrator.  Was set to 160° for about 45 minutes and then and then at 140° for about 1 hour and 45 minutes.

Ended up with a yield of about 35% of the gross weight of the beef.  It was about 50% of the trimmed beef.

I am experimenting.  In order to get more meat smoked within a given amount of time, I am experimenting with pulling and finishing in the dehydrators.  If I smoke for 2-3 hours and pull off the smoker to finish, I can get another batch on the smokers and finish them on the dehydrator later.  If any of that makes sense.

I think you said both inserts were supposed to be in when you tenderize beef?  I though it was just this one?

No, I said I had both in when I used the jerky slicer, and was not sure if that was correct thing to do or not.

You could not use both or you will end up with sliced meat like in my pics.

After completing assembly, it looks like you need to run both when using it as a slicer as the tenderizer is the only portion with a shaft to link into the motor of the grinder.  There are then gears on the end of both the slicer and the tenderizer that turn the slicer using the shaft from the tenderizer.  If any of that makes sense with my lack of engineering background explanation.

They must sell a jerky slicer attachment with a shaft on the end of it to go into the motor as you can buy this unit as a standalone slicer, a standalone tenderizer, or a combo kit like I purchased.

Very cool, tenderizing as you slice is very desirable for may applications I would think!  A 2 inch CFS is probably not a good option!  So I can see why the slicer is removed for tenderizing!  That thing is a work of Art!

Just discovered there is another tenderizer part in the box.  I suspect when tenderizing you swap it out with the slicing part.
