I have been using the 15 inch bags for quite some time and 18lb. Briskets slide right in!
The 16" wide seal bar and the 15" wide bags were the driver behind my purchase. That equates to approximately 9.5" or so diameter circle and I think I can get a decent size whole brisket in there for sous vide. We shall see.
