Huge T-Bone Steaks??
« on: September 01, 2018, 08:22:46 PM »

I picked up two huge T-bone steaks today that weigh about 2.2 pounds each.  They are labeled Angus Select, but they have a fair amount of marbling.  I am thinking about smoking them and then do a reverse sear using my grill grates unless I am convinced otherwise.  One issue I have with this is switching my GMG DB from smoking to grill.  I have the two piece drip trays.  I am assuming I would have to take the steaks off and then either line up the holes for grilling or remove the top tray.  I would then have to get the temperature up for grilling.  All this time the steaks are cooling off.  Another option is to sear them on my blackstone.

Any opinions are appreciated.

I've modded my DB. I can smoke on the right side, then, place the meat on the left and crank up the temp for instant direct heat.
