  • whole bird.  Sounds like a long brine and careful not to over cook.

  • Found this site from a suggestion from another BBQ site.   We dont allow links to other BBQ sites...and the link did not go to a recipe.
    Plan to brine and smoke the bird then use the breasts for the Pheasant with Mushrooms and Cream recipe.  The resto f the carcus I'll use for a stock
