Wings for Graduation
« on: April 18, 2019, 11:36:02 AM »

My son got word out to friends that I smoke some awesome wings.  To the extent that a friend of his wants me to do 400 wings for his grad party now. I've got a DB and a grill. Looking for some suggestions on best way to turn these around. He wants them done by 8 am for a grad party that starts at noon. I am going to talk him out of that.  Thinking of starting batches on the smoker for an hour then finish them on the grill. Anyone ever deep fry them after smoking to crisp them up? Usual smoke time is about 2.5 hours.  They are also doing pulled pork which I would have loved to have done, but another friends dad is doing that.

I plan on marinating them the night before.  Half in sriracha and Frank's Hot Sauce and the other half just kosher salt and black pepper.

My mantra, and it applies to a lot of different requests from people.

"Lack of planning on your part does not constitute an emergency on my part."

Just saying, I personally would back away on that request.  :2cents:

Good Luck!!! :)
