I prepared a recipe that called for truffle salt so I purchased some, $$$. It's hard to describe the impact, but IMO, it did enhance the flavor.

Good article.

It’s difficult to switch salt types when following a recipe because the shape of the salt grains is different, so they pack into a container differently.  Since kosher salt grains settle in a measuring cup differently than the table salt grains, you can't use the same volume if you switch salt type.

But I usually want to switch salt types.  How do I do that accurately?  The answer is to convert recipes from listing ingredients by volume to listing by weight.  So here’s my conversion chart.

That’s a handy chart.

I'll add to it as time passes.  For instance, I want to add a sugar substitute sweet taste equivalent in the top portion, but I don't yet have a handle on it.  The bottom portion is useless now but will improve.

I'm open to additions if someone has entries to offer.  I'll also share it (Excel file) if anyone PMs me.

Yeah, that is getting printed out and taped to inside of spice cupboard!  Since having the digital scale, the volume measurements have gone out the window, and I get upset when I have to deal with them!
