  • I quit buying commercially canned tuna some years ago.  (Sorry Charlie) Buddy at the beach gets it fresh off the boat and I go down and we spend the day canning 1/2 pt. jars that last about 2 years.  Then it's back to the coast for a mini-vacation and canning.

Tuna keep getting closer to land and that makes it easier for the small boats owners to go out and catch their own. I believe they got within 20-30 miles (if not closer) of Charleston Oregon this year. Friend went out in a 24 ft boat and got 40 in one day.

  • The Bumble Bee canned Jalapeño Tuna (in Olive Oil) is pretty darn good if you can find it.    Just a tiny hint of the pepper combined with the Olive oil make for good flavor and it doesn't require much mayo.

  • Years ago, when the aunt in-law was canning, she used to put a jalapeño in several of the jars.  My favorite.  Might have to do that one of these times with some of my serono or Thai peppers. :lick:
