 I found this to be informative. The RTD and meat probes used in most pits is N1 1,000 ( platinum,measuring 1,000 ohms @ 32ºF/ 0ºC ). The top drawing is representative of this simple device. Simply a coiled

wire protected by a shield. It works by the change in resistance caused by the temperature of the wire. That resistance variation is sensed by the controller to control the different functions.
