Cooked with Canned Veggies Today!

Made SIL's excellent 4-Bean Salad, best ever!!! I hated the traditional 3 Bean Salad that folks made, but when I tasted Sue's it was like no other. And healthy to boot! You can make something delish with canned veggies. Made a double batch because Bentley loves it so.

This is a credit to your cooking skills. I can't wait to crack open that case of canned peas my wife bought at Sam's Club. You know, the little grayish green orbs that are the distinguishing characteristic of schools lunches and cheap cafeterias.

It looks great and I really like bean salad, but other than tomatoes, I have not knowingly eaten canned vegetables in over 60 years. A long time ago, I did a side by side taste comparison of several frozen verses caned vegetables and have never looked back.

I am usually the same, but when I tried some of this salad, I was hooked on cans for just this dish.

Okay, so equal parts yellow and green string beans, garbanzo beans and red kidney beans?  Right out of the can, drained?

Yes, can of each drained.  Then a half cup of finely diced bell pepper and 1/2 cup of finely minced onion.  My SIL also adds a half cup of finely diced celery.

Then 1/2 cup of sugar, 2/3 cup of apple cider vinegar, 1/3 cup of oil, pinch of salt, 1/4 tsp of pepper.  Best to mix the "sauce" first so that sugar can dissolve.  Mix everything together and in frig to get cold and marinade.

  Just couldn't resist: The following is the height of sarcasm, so please excuse me.... The mind does strange things in the state of confinement.

 Could this be a case of discarding the veg and eating the can?
