With all that is going on the farmers and ranchers in Kansas are going bat xxxx crazy selling direct to the consumer. The BIG problem is getting the meat into a locker for processing. Most of them are booked into next year. My son bought a 400# hog for $60.00. He has a friend who can butcher and took him up on it. A 30 pack of beer and it is done. Here is the bacon he has asked me to cure. I have to say I have not seen a belly like this before but the end result should be good.

I have to say I have not seen a belly like this before but the end result should be good.
It was almost square? Not sure how to describe it exactly. Of the many we have done they were 15-19” (top to bottom) and about 24-30+” long. Does that make any sense? I am not a butcher.
