  • I've had at least one kid in braces since I've had this grill. No more, so I can finally do ribs with mo complaints.
     
    Six hours at 225, basic rub, sprayed with apple juice every half hour starting at the third hour.

    Came out really good but I think I would like them a little more tender.

  • Having them go a little longer might help with tenderness. By the looks of the bone they might have been able to go an extra 30 minutes or so. Looks great to me though!!

  • Thanks. Family actually thought they were perfect. I grew up eating ribs where the meat was ready to fall off the bone.

    Works well.  I do mine at 260* for 2 hrs; foil at 260* 1 hr; then painted and naked for 30- 45 min to finish.  The surprise is that they are well rendered, but are still moist, and tender.   BarBLew's (Fast Eddy) method is great if you don't want to foil.  Bottom line: shorter time, higher temp seems to be better with or without foil.  Good luck.  :2cents:

  • I did 5 racks last weekend for a party.  3-2-1 style at 225, then raised it at the end.  Too fatty / chewy yet.

    Not sure if I sprayed too often or if I should have raised temp sooner.

  • Yeah, 275° (true), bone down and 3 hours and you have a pretty good spare rib!  I am coming to believe that and move away from the Texas Crutch on ribs!

  • Thanks, I just tried doing them at 275. They were done in a little over 2 1/2 hours and were the best I've ever cooked.
