I do wings entirely in Zone 4 (the indirect side) on a well-greased seafood grill grate (see link at bottom).  They turn out great -- click on the photo for a hi-res view:

The recipe:
•   Preheat PG500 to 425º
•   Rub wings with peanut oil, and liberally sprinkle with salt, pepper, and paprika.
•   Roast in Zone 4 until brown (about 30 minutes), then flip.
•   Roast on the other side until brown, and internal temp is 190-200º.
•   Remove wings, dial oven down to 250º, glaze the wings, place in a roasting pan, then return to oven a few minutes to set the glaze.

The Glaze:
•   3 tbsp soy sauce
•   3 tbsp sriracha
•   1 ½ tbsp oriental rice vinegar 
•   2 tsp sesame oil
•   1 tsp garlic powder and 1 tsp powdered ginger (or more, to taste)
