Steak and asparagus dinner on PG500

Tonight I reverse seared a new york strip and made bacon wrapped asparagus on the side.

I fired up the PG500 to 225 and put the steak in zone 4. When the steak's internal temp hit 90, on went the asparagus in zone 3. Once the steak was as 115, I took out the steak, moved asparagus to zone 4 and heated the PG500 to 450. I seared the steak in zone 1 for 3 minutes, flipping and turning every 30 seconds.

The pictures don't do the steak justice, the flavor and texture were fantastic.

I seared the steak in zone 1 for 3 minutes, flipping and turning every 30 seconds.


Flipping and turning every 30 seconds ...... That's the secret, leaving the door open, preventing top down heating. With a steak that thick  bring the PG up to temp, lightly oil the steak and then flip it every 30 for 9 minutes. .... HHT150.

I was so concentrating on the beef in the photos that I did not see that it is multiple asparagus that are wrapped, makes more sense!

I know it's just me but I hate to see Bacon wasted like that. lol!  Awesomeness on the Steak though, Awesome!

That steak looks fantastic!  Did you leave the doors open while flipping the steaks or did you close them after every flip?
