Bacon and beef.

So 2 weeks ago we started curing a pork belly for our Son. Time for the smoke. In the meantime we picked up our order from Elm Creek Beef, Topeka Ks. We ordered a couple of filets, beef bones for our dogs......and these. Beef ribs, holy smokes they look fantastic. I am going to try to not ruin them. See tag, $4.49 a #. Got a few other things also. Bacon is about to get a kiss of smoke.

I think they are Short Ribs and not Back Ribs!

I agree, but that is what they called them so I just cooked them.
