Why no onion?

The recipe didn't call for onion on the skewer just as a garnish on the tacos.

I decided to use some of the leftovers tonight and put together a plate of nachos. Easily the best nachos I tasted. My usual go to is either gr beef or pulled pork, the al pastor was a great bump up in flavor for the whole dish.
