I am gonna assume the darker discoloration on the Sweet Potato is due to sugar content?

Some of the sweet potato chips were lighter. I was working on how long to keep them in the oil since they were not crisping. I started pulling them earlier after I noticed the chips crisping while they cooled.

This was my first time with sweet potato's. They were definitely different to cook than the russets.

They are definitely too sweet for me. I am not a real sweet food eater. I will skip them in the future unless somebody asks for them. I just wanted to see how they would turn out.

A caveat to my comment is I can't remember the last time I made or had a Cubano.  They tasted like dill pickle to me.  But what is the over/under on percentage of people that have had a Cubano sandwich?  Maybe 40%?

I did see those chips in the store.  Didn't try them though.

The very first Cubano Sandwich I had was at a Jimmy Buffett restaurant in Delaware.
Apparently Margaritaville name was not available in Delaware so he named it Cheeseburger In Paradise.
My next door neighbor owned a couple Dunkin' Donut shops and was having one built and shared half of the building with Buffett.
He met Jimmy Buffett once, and said he didn't know who he was. Haha

Back to that sandwich, I fell in love with the sandwich, it was so good.
So I make my own on occasion.

Those chips were a one off.  Mainly tasted like dill pickles with a bit of bbq seasoning.

Have tried several different ketchup chips never found one I thought was good enough that I would buy another bag of the same brand, Never seen Mustard chips that I can remember, I will have to look for them. The Hot Honey chips weren't bad, still prefer the red hots though and Gibble's Red Hots if I am buying and they are in the shelf. There are probably others but they are one of the only ones cooked in Lard or they used to be, have not had any in a while,
I like chips to much to buy them to often, they usually don't last but a day once I open a bag. The Doc tells me they are  not good for me, not that much of anything is.

Grandma Utz (fried in lard)

Martins Chips. (I think these were fried in lard too they have a tangy flavor).

I bought both recently and they are divine.  The martin's aren't quite what I remember when I was a kid but they were good.  They seem to be available on amazon or local stores!

I see Martins Chips in a few stores now and then, are the Grandma UTZ in a brown bag, if so I have had them, wasn't aware they were done in lard.

I am not sure I am creative enough to even know where to start on a project like that when it comes to flavors.

I like Good's chips in the red box. Made in PA. Hard to find here in WI but one store carries them.
