Twice Baked Potatoes -- what do you like?

Bentley and I are cooking for a friend's son's wedding rehearsal dinner.  Menu is simple, but classic -- Caesar salad and rolls, rib eye roast (we scored prime grade for $10 a pound!), twice baked potatoes, glazed carrots and cheesecake for dessert.

I have suggested what I think of as a very classic filling for the twice baked potatoes -- potato mash, butter, sour cream, cheddar cheese, chives and bacon.  I don't think Bent is very impressed.  What do you folks like in a twice baked potato?

Little bit of horseradish.  More salt than most recipes call for.

Sounds like a great menu to me.  Exactly how I like my twice baked.  I guess I am a little boring, but why mess with a classic.

I agree with all of the above.  And I would love to find a roast like that at $10#. ;D

Yep, that's exactly how I make our twice baked potatoes and how we order them. 

EDIT:  What else does Bentley recommend?

A favorite of ours-we do stuff with backfin crab meat for special occasions.

Yep, that's exactly how I make our twice baked potatoes and how we order them. 

EDIT:  What else does Bentley recommend?

He can say if I have this wrong, but I think he doesn't want much in them. He was saying it should just be potato mash, butter, salt and pepper and then sprinkle a little grated cheddar on top.  I said if you are doing that, just make mashed potatoes at half the effort.

I'd leave the sour cream on the side for folks to add if they want it.  Of course, I'm not a fan of sour cream in anything.  Everything else sounds great.

I am not big on put most ingredients in the potato mixture.  I like sour cream, a touch of garlic (I like horseradish but do not think majority does) s n p.  I like to pipe that, then put the cheese, bacon and chives to finish.

Some what like this photo (I like the bacon much finer).  Some will say it is nothing more then a pregnant potato skin, so be it!

Kristin’s version is basically how I make them with the addition of garlic powder.    Sounds good, but truthfully I’ve never met a twice baked potato I didn’t like.

We always mix all our ingredients in together and re-stuff them, I would surely eat them anyway though.
We both love twice baked, however Never horseradish. :puke:
