More Pork Butt Data.

2 Costco boneless Boston Butts.  Memphis Pro set at 275°, meat put on in pan at appx 9:30am.  I had no intention of posting on this, but it will be the 1st time I have ever done a butt from start to finish in a pan as request.  I wish I had taken a picture about 90 minutes ago, very unappetizing.  It is getting better.  I will be interested to see how the exposed portions end up with bark and color.  I believe they went in naked.

Do you plan on seasoning it up afterwards? I betcha it will be great pulled, been a while for pulled pork for us.

I put some karo, brown sugar, salt, garlic powder and paprika.

did you leave the fat cap on or trim it?

why did you choose to pan for the entire cook?

Did you cover with foil at any point during the cook?

How long did it take to make them?

11 hours @ 275°.  I thought it would be in 7 to 9 hours at that temperature.  Entire time in pan is certainly not a time saver!

I tried a couple of bites last night.  Being cooked naked for the most part, it tasted like roasted pork with no seasoning.  To me, zero flavor.

I covered when I put the seasonings on.  Cooked in pan to catch the juices.  Put in the frig and had "butt jello" in the morning.  Mixed that, a little cider and a little bit of sauce with the pork in the morning and put in crock pot to reheat.

It was a wonderful day for a walk-a-thon -- perfect weather, open spaces. lovely old and new friends and adorable service pups in training.  What could be better.  A small group met up at Lenn Park to participate in the Blue Path Service Dogs walk-a-thon.  Started with a zoom call where we learned that $114,000 had been raised at the walk-a-thon to provide service dogs for autism.  Yea!!!  Then our group had a socially distanced walk, then across to our house  for lunch -- bbq pulled pork sandwiches, cole slaw and a mind blowing array of chips provided courtesy of Yellow Dog Vending Bristol, TN.  Great day!!!!
