  • There was a simple pot roast recipe on the old site that appears to have been lost.  I have made this several times so I think that I can generate the recipe from memory.

    1.  Use an approx 4 lb chuck roast.
    2.  Mix instant ranch dressing, instant Italian dressing mix, and instant brown gravy powders (whole packets and this makes enough for 2 roasts)
    3.  Coat both sides of roast with the mixture and place in 1/2 steam pan
    4.  Add 1 table spoon of Better than Buillon with a cup of water (can also use the buillon cubes with water instead)
    5.  Smoke at 250 deg uncovered for 2 hours
    6.  After 2 hours cover pan with foil and continue at 250 deg
    7.  Cook for additional 4 hours (can continue in oven since covered with foil if you want to save pellets)
    8.  After the 4 additional hours remove foil to add carrots and potatoes (I cube up 2 baked potatoes and add 3/4 of a bag of mini carrots)
    9.  Cover the meat and vegetables with black pepper to taste
    10.  Recover the pan with foil and cook and additional 2 hours until the vegetables are tender

  • Dog gone! Made a 4lb der last night. Wish I would of had this. Looks like a tasty idea! and something new to try.

    What do you mean by 1/2 steam pan?  :P

    If you are at Costco or Sams, it is the smaller foil pan that they sell.
