  • I think you are better off smoking meat at 275° anyway as it seems to break down the fat better on all of my smokers than at a lower temp, still gets good smoke, and doesn't burn up the rub on the meat.  So, if you switched to cooking at that temp, your grill and controller will be a perfect match.
