Ribs on SmokinBrothers PP36 via Fast Eddie Method

I quit wrapping my ribs years ago and started using this method.  I did modify it some due to the ribs getting burnt by lowering the temperature on my GMG.  This smoker does not have the ups and downs the GMG has.  I have been looking for a printed version of this to refresh my memory.  I believe this method called for the smoker temperature to 275 degrees.  I also remember it took around 3 hours for baby backs and 4 hours for St. Louis style, but I could be wrong.

I tried this method when it was published on the PH site, ribs burned badly and have not tried it again. I think that it has to do with type of grill that Fast Eddie uses. His has different heat distribution than GMG or Traeger.

I've always used it on my Memphis.  Never had issues.

I use this method on my GMG with good results.  I did have to modify the recipe and remove the brown sugar coating, it did burn the bottoms the first time with all that sugar.

I did Fast Eddy's on Jan 26. (my birthday).  I used the brown sugar the night before, it left a brown liquid in the foil the next morning. I used "killer hogs" rub instead of Eddy's.  275* naked, for 3 hrs.  They were done a little earlier because I found that my 590 is running 30* hotter. At the end they were darker, with a better texture than foil wrapped ribs, but came off the bone with mild tug. My wife and I both agreed that the bark was better and that the brown sugar had something to do with that. We painted them with sweet Baby Ray's Honey BBQ sauce lightly and served after they sat for 5 minutes. I have to admit they were outstanding. We will go that route for now. Better smoke flavor for sure.   :lick:

PS: I reset my 590 "Offset" before shutting down. Now center grill grate temp is about the same on both the control and my Maverick grill thermometer.
