I like to take a warm soft corn tortilla and wrap it around the crispy one when we have crispy tacos.  It keeps me from wearing everything when the tortilla shatters with the first bite.  I try to get all of the goodness in me and not on me.  I too love puffy tacos but can't figure out the technique. 

They are very popular up the road in San Antonio, which is where they supposedly originated in the 1950s.  The minor league baseball team has Henry The Puffy Taco as a mascot.

The old saying of eating a hard taco over a tortilla and you get to eat 2 tacos, comes to mind.

I might have to go Super Gringo tomorrow and lightly fry a corn tortilla just so that it is pliable.  Then smear it with frijoles, then wrap it in the flour and put the meat and other ingredients in that!

They all are looking good so far. Not a one I would not eat and look for more.

Hank, those are corn shells you made? Are they deep fried to make crisp, or baked in a hot oven?

I love hard tacos. Just simple meat, mater, lettuce, cheese and some sauce. If the meat has good flavors I don't even need sauce.

Those were just whipped out from store bought tortillas deep fried.

Here are a couple of posts showing doing the same with homemade corn tortillas (including how to make them). The picture is a taco made from heirloom red corn masa tortilla.

Notice that I am not much for presentation. I throw it together and eat it.

Interesting. I have never seen puffy tacos before. I think the dryness she talked about is important to getting the puff. You still need to create the air pocket. Too wet and it sticks together.

I would try those but I am don't really like to use that quantity of oil. I don't use deep fryers.

If I had my druthers, we would have a taco thread, or maybe a Mexican food thread, just like the sandwich, bread, burger and pizza threads.

If you want to try this, make a trial run with biscuit dough. Roll it out or use a tortilla press, then fry it. You’ll get the feel for the puffy tacos I’ve experienced.
