Memphis Meatloaf...

Just a simple Beef & Pork meatloaf.  About 4.5lbs.  325° till 145° IT and then pulled and rested 5 minutes.  The probe is dead center. I figure about 90 minutes.

I realize they probably eat meatloaf all over the world. But for me, a classic Americana meal.  It was very good!

I too like it better in sandwiches. Did you paint it in catsup before or after cooking?

Looks good. What all do you put in yours? I usually like big pieces of onion so mine is not as tight as yours looks to be.

This was a 4-1 ration of beef to pork, and it was just ground picnic, no seasoning.  2 medium onion run through food processor, I like them very fine, juice included. Salt, Lea & Perrins, ketchup, yellow mustard & bread crumbs.
