Thanks mowin, C&C is the only place I've seen the packers in my area, and this is the brand, but as Bentley said, there does not appear to be any kind of grading on the package

I've made brisket hash, but not CB hash, which sounds like a winner.  However, she does like pastrami hash browns:

Just made a run to Restaurant Depot near my office (Raleigh, NC...Cary technically).  They have corned beef packers in stock.  It's a  seasonal supply as Bentley mentioned. 
This location only had one type to choose from and they were $2.59/pound.  Not sure of grading...forgot to look before posting.

They ranged from 10.5 pounds to 21 pounds and everything in between.  I grabbed 2 beauties at approximately 12 pounds each.  They will go into the deep freezer today and await their pastrami destiny in May. 
I'll check back in with this thread for tips and advice.   

PZ, those crispy bites look really good.  I need to try that.

I think you'll like them Ralphie - I made the same this year again, and had two other couples over for St. Patrick's day - everyone loved them.

Just wanted to mention that my Restaurant Depot in Raleigh, NC is carrying whole packer corned beef briskets year round now. No longer just seasonal for St Paddy’s.
