Anyone Cooking Mexican for Cinco de Mayo?

I am teaching tonight so home a bit later than normal.  I think I will just do some simple gringo tacos.  Anyone else cooking Mexican today?

It's National Hoagie Day so I am ordering from Jersey Mike's.  I'm going to a Cinco de Mayo party on Saturday.

Had a couple small blackened steaks left over from the other night. Cut them into strips added a couple tablespoons of oil and some off-the-cuff fajita seasoning I made along with sautéed peppers & onions made for some quick fajitas last night.  All I had in the cupboard was brown rice so I added some cumin, paprika, and chili powder to it and microwaved it up.

Just realized it was Cinco de Mayo. After all my posting on Mexican food, it looks like I will be eating vegetable stir fry my son made last night.

Either that, or I will eat some of the huge lasagna I cooked a couple of days ago.

Nope.  It's not my holiday.  My Latino friends tell me–
  • It's actually more popular with the non-Latino population in the U.S. than it is in Mexico.
  • That gives them a laugh because it's the date when the Mexicans defeated the French (whites celebrating a Latino victory).

By accident, not thinking of Cinco de Mayo, we made fish tacos from leftover seared tuna last night.  Cole slaw on top with lots of cilantro and guacamole.  A nice little meal.

I’m not from Mexico or Thailand but it’s Pad Kee Mao tonight.  Now I’m thinking buldak might be nice. I’ll figure it out while staring into the refrigerator .

I should have attended one of the many celebrations in my area.

Southern California has some of the largest celebrations in the country. The largest is the Fiesta Broadway Festival.

Also, we have some of the best Mexican food. You may find good Mexican food throughout the country, but not the number of places you find here.

Not bad at all.  I am not sure why I did not cut the Cod into strips instead of Nuggets, but it still worked.  My cabbage sauce was weak, but what are ya gonna do when you throw it together and don't think it through!

We didn't have tuna strips in our tacos either.  We just flaked the cold steaks.  I'd do it again.
