Cooking some brisket for a friend

Hey guys I am cooking a bunch of briskets for a buddy to serve on Saturday but since I am traveling I need to make them Wednesday night in to Thursday.  I told him I would vac seal them up.  The question is how do I / what temp should I vac them up?

If you can wait until they are completely cooled, you will have much better chance of no moisture loss.
