Cinnamon, cheddar cheese and pasta was on the recipes I perused. There was one recipe that had cocoa.

I have one book on hole with recipes from all over North America but none for Cincinnati Chile.  It was mentioned however the author said no one in restaurant was willing to share their recipe.  So I wonder what the origins recipe contained
