Chicken Scaloppine in a Lemon Sauce

Tonight I made Chicken Scaloppini served over a bed of saute spinach with mushrooms and almonds along with roasted potatoes and finished with a creamy lemon sauce.  The mushrooms were cooked in a champagne vinegar and then added tot he sure spinach.

I missed this one!  Were the Lemons, salted or preserved?

I, too, didn’t see the post when it was new.  The lack of following posts tells me that none of us did.  I wonder if there was some system problem that kept us from seeing it in the list of new posts.

Anyway–great cook.  I salivated like Pavlov’s dog just reading the description.

As I pay more attention, what I thought were lemons were the potatoes!
