  • Tonight I made Chicken Scaloppini served over a bed of saute spinach with mushrooms and almonds along with roasted potatoes and finished with a creamy lemon sauce.  The mushrooms were cooked in a champagne vinegar and then added tot he sure spinach.

  • I, too, didn’t see the post when it was new.  The lack of following posts tells me that none of us did.  I wonder if there was some system problem that kept us from seeing it in the list of new posts.

    Anyway–great cook.  I salivated like Pavlov’s dog just reading the description.
