The healthy cooking continued today with smoked turkey meatloaf.
The meatloaf used the following:
3 pounds of 93% ground turkey
2 shredded hot dog buns
2 eggs
Diced onions, green peppers and red peppers
Shredded zucchini and carrots
Tiger sauce
Oregano, basil, marjoram, sage, thyme, salt and pepper.
The mixture was added to two foil loaf pans. Holes were punched in the bottom of the pans to drain the fat while in the smoker
The two pans were smoked for about 1 3/4 hours at 375F, until the internal temperature was above 165F.
After resting, the meatloaves were removed from the pans and sliced.
They turned out really well. The Tiger Sauce provides a nice kick.
I have added shredded cabbage and cherry tomatoes in the past. If I add enough cabbage they start to taste like the inside of an egg roll.
